I miss Velma today

The XFiles movie is coming, you see, and some of my favorite moments in life where XF nights - sitting and watching, heckling and shipping and having teary moments.

It's the only TV show that I'm passionate about (still) and, if I could, I'd fly to Raleigh just so we could see the movie together.

Of course, the second movie hopefully wouldn't include me going to scream at the projectionist, us getting moved to another theatre, heckling about the mountains in Dallas and all the 'texan' children having Alabama accents...

There would, on the other hand, be popcorn.

And no, V, I won't forget Mom's birthday. ;-)

We made B6!

*chuckles*

So, those of you who live close enough to go to lunch know that my favorite Vietnamese place is Mekong River and that I *always* get B6 when I go - vermicelli bowl with nuam choc and roasted pork.

Larry and I put our heads together - he roasted pork. I made nuam choc sauce and TA DA!

B6!

Recipe:

4 packages of ramen noodles
4 boneless country ribs, roasted (you can use any meat)
3 shallots
sesame oil
1/2 head of lettuce
1 cucumber
4 carrots
1 c. peanuts
Nuam choc sauce (recipe below)

Cook your ramen. Slice the shallots up and fry them until golden brown in the oil in a big skillet. Add your meat, just to warm up and mix the flavors. Cut up your lettuce, carrots, cukes. Drain the noodles and cool them off with cold water.

Now, in 4 bowls, layer noodles, lettuce, cukes, carrots, meat, peanuts. Top with sauce.

Sauce:

1/4 c. fish sauce
1/4 c. water
1/2 c. rice winer vinegar
2 cloves garlic, smashed
1 jalapeno, diced
3 T. sugar
2 T. lime juice
1 carrot, shredded

Mix all ingredients and stir.

Home and Thank God Con Season's Over

Today I'm going to clean the house and work. (We came home to Amanda working on the a/c - after two days, she and her daddy got it working - go team them.)

Today there's a Most Evil marathon, as well as horror movies based on video games.

I'll have more to say - mostly about my trip because dinner with T2 and hubby was fabulous and Disneyland was... Dude. DUDE.
