Basic Muffins
1 3/4 c. flour
1/3 c. sugar
2 t. baking powder
1 egg
1/4 c. oil
3/4 c. milk
Stir until mixed - there'll be lumps. Cook at 400 degrees for 20 minutes. Makes 12 muffins.
For blueberry - add a cup of frozen blueberries
cranberry - add a cup of frozen cranberries and a tablespoon of orange juice concentrate, increase sugar to 1/2 c.
apple - substitute applesauce for oil and add 1 medium chopped apple
banana - reduce milk to 1/2 c. and add 2 mashed bananas and a 1/2 c. walnuts or pecans
oatmeal raisin - reduce flour to 1 c., add 3/4 c. oats and 1/2 c. raisins and 2 T. cinnamon, increase milk to 1 c.
cornmeal - reduce flour to 1 c., add 3/4 c. cornmeal and 1 more t. baking soda.
