Gingerbread Pancakes
3 eggs
1/4 c. brown sugar
1 c. buttermilk
1/2 c. water
1/4 c. brewed coffee (I like hazelnut cinnamon)
2 1/2 c. flour
1/2 t. baking powder
1/4 t. baking soda
1/2 t. salt
1 t. cloves
1 T. cinnamon
1 T. ginger
1 T. nutmeg
4 T. melted butter
Mix eggs and brown sugar until well combined. Add buttermilk, water and coffee. In another large bowl, sift together flour, baking powder, baking soda, salt, cloves, cinnamon, ginger, and nutmeg. Add the liquid ingredients to the flour mixture and stir just until combined. Stir in the melted butter.
Cook like you'd cook pancakes but make sure you *really* spray or grease or butter the griddle/skillet.
For waffles, add 1/4 c. oil and I leave out the coffee because I think it tastes burned.

Awesome! I *love* ginger, oh yes I do. I have a ginger cookie recipe that calls for instant coffee and when I first made them I was like, huh? Coffee? But it's so good. Who knew? :D
