Ma-Maw's Cornbread
Manda says it tastes just like hers. I hadn't made it by myself before - why? I don't know, really. Mostly because that was a comfort food that I never thought of making. My default comfort foods are hamburgers and potato soup and popcorn (I inherited that from my mother - no question, she and I have this popcorn obsession), but Terrie used to make this and what we all call Mama's Enchiladas (which aren't really enchiladas, but baked burritos and a heart-attack in a pan, but god, they're good) and the most amazing tortillas *ever*. ;-)
But this was good and made Amanda happy and was soft enough to eat comfortably. Today I'm having leftovers for supper.
Maybe one day I'll figure out how to make flour tortillas...
The recipe:
1 onion, chopped
2-3 cans green chiles
1 lb. breakfast sausage
2 c. shredded cheese
1 c. cornmeal
1 c. flour
4 t. baking powder
1 t. salt
1/4 c. oil
2 eggs
1/2 c. sour cream
1/2 c. milk
1 can cream corn
Brown sausage and onion in a skillet, add 2 cans chiles. Drain. Mix all other ingredients (except for the cheese) in a bowl. If desired, add third can of chiles to batter. Pour half the batter into a well-greased 9x13 pan. Top with sausage mixture and cheese. Add the other half of the batter. Bake at 425 for 30-40 minutes. (btw - you can double the recipe, just cook it at 400 for an hour).
If you want to cut it into squares, let it sit for 10 minutes. If you're like us, spoon out bowlfuls and eat.
